Make Your Own Tahini

Tahini is a very versatile dip made from tahina, a sesame seed paste. It is a staple of Middle Eastern cuisine and can be eaten with bread or vegetables or added to your favorite sandwich. There are also many ways to adapt this basic recipe to your tastes. This recipe is incredibly easy to make and all ingredients can be approximated when you’re in the kitchen. The amounts below are a simple guideline.

Ingredients

¼ – ½ cup tahina
2 cloves of garlic
Several tbs. hot water
1-2 tbs. vegetable or corn oil
Salt, pepper, and spices to taste

First, finely chop the garlic and add the tahina paste. The mixture will be thick. Next, add the hot water. Add just a tablespoon or two in the beginning and stir with a fork. It can be difficult to get a smooth mixture at first. Keep adding the water until you reach the desired consistency. Then, add the vegetable or corn oil and keep mixing. Add salt and pepper to taste. Now you have the base for your tahini.

Cumin and paprika are a nice combination for a smoky and slightly spicy dip. However, you might prefer to add lemon and make it more refreshing. The key is to continue tasting your tahini throughout the process.
